A complete chocolate gelato base created using the best blends of cocoa, perfect for a creamy gelato but also for granita, chocolate and beverage preparations.
Made with the finest chocolate, the result is a creamy and durable ice cream. Workable both cold and hot process, ice cream with Cioquick is perfectly creamy.
DOSAGE IN ICE CREAM:
EXTRA DARK CHOCOLATE: 1.6 Kg of Cioquick + 2.4 lt of water, 700 gr. of chocolate drops.
MILK CHOCOLATE: 1.6 Kg of Cioquick + 2.4 lt of milk
HOT CHOCOLATE:
MILK CHOCOCOLATE: 1 liter of milk, 400 gr. of Cioquick, 50 gr. of Elenka Top Mousse or 30 gr. of potato starch.
DARK HOT CHOCOLATE: 1 liter of water, 400 gr. of Cioquick, 50 gr. of Elenka Top Mousse or 30 gr. of potato starch.
CHOCOLATE GRANITA: warm water 4,000 gr , 1 bag of Cioquick, sugar 200 gr. Preparation: dissolve Cioquick in the water and let it cool. Put in the batch freezer or in the slush machine.
CHOCOLATE BEVERAGE: warm water 5,000 gr. + 1 bag of Cioquick.
