DESCRIPTION AND SUGGESTIONS
Thanks to the presence of lyophilized ricotta, it confers to the gelato the probable taste of Sicilian Cassata with all the characteristic aroma of the traditional dessert. It can also be used for the preparation of cakes and desserts semifreddi. During the extraction of the ice cream add the candied fruit.
Dosage in ice-cream: gelato base Mix gr. 1000, Pasta Cassata Gr. 35/60.
In pastry: Cream yellow or cream gr. 1000, Pasta Cassata Gr. 45.
