Since 1959, when it was invented by Elenka's founder Antonino Galvagno, Zuppa Inglese is known for its slightly spiced flavor with hints of rum, cinnamon, cloves, and vanilla. It comes from the infusion of 52 herbs and is non-alcoholic. Its taste resembles Alchermes, an Italian liqueur popular in the 1950s and still used in pastry.

Just a low dosage to give the ice cream a marked Aromatichee Alchermes. Also declined in a variegated version, surprising for its versatility in combination with different tastes.

To enrich the taste, it is advisable to soak the sponge cake with the diluted Alkermes and to stratify it on the ice cream during the extraction phase from the batch-freezer.
