Nero Modicano is an Elenka exclusive product. An ingredient that comes from Modica chocolate: the oldest cocoa processing that has its roots in pre-Columbian culture. The Aztecs worked cocoa beans by mixing them with spices to obtain a hard paste. This technique was handed down in Modica by the same Spanish who discovered it during the conquest of Latin America, and in the historic Sicilian town it has continued to the present day. What makes Modica chocolate a unique product in the world is the particular processing: ground cocoa beans without being deprived of the butter, then mixed with granulated sugar and various spices, temperature kept constant at 40 ° C to give the chocolate paste the characteristic roughness and graininess.

With this "cold" processing, sugar crystals and organoleptic properties of cocoa remain intact. This ingredient can give multiple aromatic variations. Because it can be processed both in the traditional version and in different flavors, among which the spicy ones like chilli and cinnamon, the fruity ones like mandarin, red fruits, orange and black cherry, as well as pistachio, ginger, saffron, star anise, caramel, cereals stand out.
