Ideal for fruit ice creams with a consistency closest to sorbet as it does not contain milk. To be used for the preparation of fruit ice cream, with "cold" processing.
Dosage for use with fruit pastes:
- 680 g water
- Sugar g 140
- Glucose syrup 50 g
- Fruit paste g 90
- Base Nolat g 37
- Technoice g 3 (optional)
